This server wasn't the one Chuck and the others suspected of being a gunman, and clearly, that server wasn't in the restaurant. He had already used Heart Eye Observation to look at people in various rooms of the restaurant; all three people in the kitchen were busy, seemingly all chefs.
Jimmy chose Blue-eye Liliana as the breakthrough point, to give them a chance. As a senior cadre in charge of outside liaison for the Poison Snake Gang, Liliana should be relatively easy to talk to, at least not resorting to violence upon first meeting.
The server turned away directly upon hearing Jimmy mention the FBI. Working at this restaurant, she surely knows what the restaurant is really up to, who's behind it, and now the FBI visiting openly is definitely not something she alone can handle.
After the meal, Jimmy asked the server to bring a soda water. He sat there continuing to wait, almost on the dot for half an hour, when a middle-aged white woman walked into the restaurant from outside. The previous server greeted her and pointed to Jimmy's position, and she walked straight over.
There weren't many diners in the restaurant now; Jimmy just sat there watching the lady sit across from him.
Liliana: "Excuse me, detective sir, what can I do for you?"
Jimmy: "Blue-eye Liliana?"

Jimmy: "I'm here to ask you for two people. The first one is Max Hamilton."

Jimmy: "Security at the Snake Dance Club."
Liliana said nothing, evidently showing that the FBI had thoroughly investigated.
Jimmy continued, "The second person is a gunman who killed a bank executive a few days ago. Hand him over."
Liliana was clearly getting nervous, although her posture didn't change, it was evident she was straining to control her body, which was slightly trembling.
Liliana: "I don't know such a person."
Jimmy: "Don't try to lie to me. I'm here to give you face, hoping to peacefully resolve this conflict."
He reached into the inner pocket of his suit, pulled out a business card, placed it on the table, and slid it over, "Call me when you find them." After finishing, he stood up and left; the card was custom-made by him, with only Jimmy's name and his FBI phone number on it, nothing else.
Jimmy exited the restaurant, got in his car, and left the restaurant's location; he went a distance before turning back, parking far away from the restaurant, and watching the restaurant's entrance.
Soon, Liliana exited the restaurant and got into a Toyota Camry parked outside. The car started and left. Jimmy started his car and followed Liliana.
The Snake Dance Club isn't far from the restaurant; Jimmy knows the location, but Liliana's driving direction away from the Hell's Kitchen area isn't towards the Snake Dance Club.
